It is also great for people who want to incorporate more variety into their diet and will satisfy a range of health needs. Besides those with celiac disease, there are many people with wheat or gluten sensitivity. The bread machine method produces a more “whole grain” texture, making delicious sandwiches or toast. The oven method will produce two 4-1/2" x 8-1/2" loaves which are lighter in texture. It makes an outstanding bread served as an accompaniment for dinner or an outrageously delicious French toast is also easily adapted as matzo bread, a pizza crust, hamburger and hotdog buns, dinner rolls-almost any bread product you can imagine!

Ingredients
Cornstarch, tapioca flour, powdered skim milk, chickpea flour, pinto bean flour, navy bean flour, sorghum flour, MontinaTM (Indian rice grass also named perennial bunch grass, achnatherum hymnodies), maple sugar, xanthan gum, salt and gluten free yeast.

For some who observe and celebrate Pesach as well as other times, it is particularly meaningful to replace factory-made matzo, the unleavened bread so essential for the Seder meal, and for other occassions with shmura -- or shmurah -- matzo.  Shmura means watched from the harvest, which signifies that every step of the process of making this matzo, from harvesting the grain to the final baking, has been supervised by a rabbi.  It also means that when the bread is being made in its small batches, the flour and water are kept in separated spaces or cubicles as extra insurance that there is no premature contact between them until the last possible moment, thus preventing any leavening..
